These Deba knives are japanese knives made with carbon steel « BLUE 2 », hardness steel of 61-62 degrees on Rockwell scale. Not dishwasher safe due to the rosewood handle and carbon blade.
The Akira Sasaoka kitchen knives have a blade in high carbon steel Aokami2 (61/62 Rockwell hardness).
The handle is made of rosewood, the bolster in Pakka wood. The knives are made in Japan, Tosa
